This is a delicious side dish to chicken or any Mexican dish you might be making. I served ancho cumin searched chicken on top of this rice and topped it with charred corn and salsa. It was so refreshing and easy to throw together at the last moment! Find the full recipe under the recipe tab.
There was no better way to spend this 4th of July then with close friends and family while watching the Rancho Santa Fe parade and eating delicious picnic foods! I served turkey sandwiches, individually packaged quinoa, corn caprese, and potato salads, chicken skewers with a pesto dipping sauce, bacon scones, fresh fruit, chips and homemade salsa, and of course a variety of different pies, cookies, and chocolate bars. We had more than enough food! Hope everyone had a great 4th of July weekend!
